Chicken Soup with Ravioli

Your new go-to when the winter sniffles come on. Nothing beats a bowl of homemade chicken soup, unless that’s a bowl of homemade chicken soup with ravioli! One that kids and adults will love

Ingredient List

  • Small check mark in a circle icon 1 litre chicken stock (salt reduced if using store bought)
  • Small check mark in a circle icon 500ml water
  • Small check mark in a circle icon 2 carrots, peeled and finely diced
  • Small check mark in a circle icon 1/2 store-bought BBQ chicken, meat removed and shredded (about 200g)
  • Small check mark in a circle icon 200g Latina™ Fresh Mini Ravioli Kids Cheese & Vegetable
  • Small check mark in a circle icon Freshly ground black pepper, for seasoning
  • Small check mark in a circle icon Fresh dill or parsley, roughly chopped, to garnish

Preparation

  1. Combine stock and water in a medium saucepan over high heat. Bring to the boil; add carrots and cook for 2-3 minutes until just tender.
  2. Add shredded chicken and mini ravioli; wait for the soup to return to the boil, then cook for 2 minutes until the ravioli is soft.
  3. Season to taste with pepper. Divide between 4 bowls and garnish with chopped dill or parsley and extra pepper, if you like.

Tips

  • We didn't add extra salt to this recipe, but a generous glug of soy sauce takes this soup to the next level if you'd like.
  • Additional vegetables easily could be added to this recipe for a boost – try frozen peas, chopped zucchini or green beans.
