Speedy Lentil Bolognese

We don’t know a kid who doesn’t love spaghetti bolognese! This lentil version will pack plenty of veggies into your kids and also save some money at the checkout.

Ingredient List

  • Small check mark in a circle icon 2 tablespoons olive oil
  • Small check mark in a circle icon 1 clove garlic, finely chopped
  • Small check mark in a circle icon 1/2 brown onion, finely diced
  • Small check mark in a circle icon 3 Swiss brown mushrooms, diced
  • Small check mark in a circle icon 1 small carrot, peeled and finely diced
  • Small check mark in a circle icon 1 teaspoon dried Italian herbs
  • Small check mark in a circle icon 1 can (400g) diced tomatoes
  • Small check mark in a circle icon 1 can (400g) brown lentils, drained and rinsed
  • Small check mark in a circle icon 1 tablespoon tomato paste
  • Small check mark in a circle icon 250ml vegetable stock
  • Small check mark in a circle icon 200g pack Latina™ Fresh Mini Ravioli Kids Beef & Vegetable
  • Small check mark in a circle icon Grated Parmesan, to serve (optional)
  • Small check mark in a circle icon Fresh basil leaves, to garnish (optional)

Preparation

  1. Heat oil in a medium saucepan over low-medium heat. Add garlic, onion, mushrooms, carrot and herbs and sauté, stirring occasionally, for 3-4 minutes until soft.
  2. Add the tomatoes, lentils, tomato paste and vegetable stock to the pan. Increase heat to high to bring to the boil, add ravioli and stir to coat, then wait for sauce to return to the boil and cook for 2 minutes until the ravioli is soft.
  3. Divide between two serving plates and serve sprinkled with a little grated Parmesan and garnished with basil leaves, if you like.
